Chef Eduardo Ceja

Founder / Chef / Co-Owner

Chef Eduardo Ceja is from Zamora Michoacan Mexico. Moved to Phoenix Arizona at a young age and was raise din Glendale. Has spent some time in

Philadelphia, Pennsylvania for work, but eventually missed Arizona so he returned.


Having elaborate experience in various kitchens, he maintains steady and constant practice within various different culinary styles and techniques around the world. With experience ranging from seafood based restaurants to high end steakhouses, he started dishwashing at a small Asian restaurant and started climbing the ladder since. He picked up culinary books and got involved with work as much as he could and eventually became a chef marching at his own beat. 

He decided to become a chef because… “Why not?”, he realized early on he could not bare to ever sit in front of a desk all day.


“Food is very powerful and is at the center of various cultures and varies from family to family and town to town”. “Great food can turn a bad day into an alright day”.

“People bond over food, dates usually involve dinner or lunch. I feel food has an impact in peoples lives and their day to day”. 


Being exposed to a poorly managed concept where the money was good but the culture was unhealthy and members within didn’t like being there, one day he decided he had had enough, he decided to make a call. Manufacturing his first food truck trailer in Mexico (since the funds weren’t quite there for a brick and mortar),

taking out a loan against his assets, he went all in on the designs that were in his head.


Having the help of his dad (Eduardo) since day 1, his brother (Ricardo) joined him 3 months since opening the doors. and they have been charging full steam ahead.

 They are excited for the future that is to come. 


While still learning and expanding his culinary knowledge, he decided he wanted to create his own menu and way of doing things so he began to work

on a business model for himself. 


His goal is to deepen the flavor in Mexican cuisines while still maintaining its ‘tegrity! “When any Mexican abuelita sees how we make our recipes and the ingredients we use they are shocked, but when they take the first bite they are taken back and pleasantly surprised at how great it tastes. But overall it’s the journey of trial and

error that drives me to figure out how to improve our dishes”.


His cooking draws inspiration from many areas in his life, 2 of which being his children. They are one of the reasons he started his own business. Wanting to give them the best tools and education to succeed at the game of life, he draws motivation from them in order to keep going. 

He has 2 kids who are at the ripe age of 4 & 5 (as of 2023) which keep him on his toes when he is not in the kitchen. On any spare time he finds away from the

food truck and his 2 kids, he enjoys some rounds of golf or a hike to clear his mind.


Chef Ricardo Ceja

Chef / Co-Owner

Chef Ricardo Ceja is from Phoenix Arizona. He has extensive experience in various kitchens varying from fine dining to casual, such as TrueFoods Kitchen, Mastro’s Steakhouse, La Grande Orange and Buck & Rider. 

He became a chef after falling in love with the atmosphere and grind of the kitchen. 


After searching through college and not finding a fulfilling task, he started as a dish washer to pay for college and that is where he heard his calling. “It felt good to be good at something and work my way up to prep cook and then line cook and eventually becoming a chef. You never stop learning in this industry. I have so much to learn.” 

Deciding to stop over-working and killing himself for someone else, he went to work and joined his brother in the family business in order to have a better future for

his daughter and to stop making someone else rich and instead create that wealth for himself and his family. 


Drawing inspiration from both his brother and his father, (both named Eduardo), they motivate him to learn to become a better cook, be more creative in the kitchen and run the family business. Witnessing his guests enjoy his food urges him to search perfection even though knowing it lies beyond the mortal hand. He is amazed

watching the company grow.


Ultimately his daughter inspires him to become a better person and version of himself, and keeps him focused on becoming successful.


When he is not preparing mouthwatering tacos and giant burritos, Ricardo is at home with his beautiful daughter Jade Valentina Ceja. He likes to spend time with family all while cooking for them. Spends time outdoors and makes time for gardening and home projects.

Enjoys getting lost in the Valley and cultivating those hidden gems throughout.
